ALL ABOUT CORZETTI CUTTERS
While everyone is already familiar with classic pasta shapes like farfalle, maccheroni, and rigatoni, a whole new world of amazing personalized pasta awaits you during your Corzetti Pasta-making class. Corzetti pasta cutters are part of an ancient Ligurian tradition used to create beautiful customized designs directly onto handmade pasta dough. Used traditionally by noble families to display their family shields and symbols, artisanal woodworkers in both the Ligurian and Tuscan regions are bringing back this tradition with their lovingly hand-carved pasta cutters made from treasured local woods like olive, maple and beechwood (all stable woods free from resins and tannins whose flavor might corrupt the fresh pasta doughs).
Your class will provide the perfect opportunity to learn how to create a variety of different doughs that provide the perfect density and consistency to hold their shapes once pressed by the Corzetti cutters. Your teacher will also show you why the Corzetti pasta disks are so effective at holding their sauce as compared to other traditional Pasta shapes covered during your course.
You’ll have the chance at the end of your course to purchase your own Corzetti cutter to bring home with you so you can recreate this unique dish for your friends and loved ones! We're delighted to set up this unique culinary experience for you!

Leap into the heart of a beautiful Northern Italian culinary tradition as you learn about the historic Corzetti pasta and other fresh pasta dishes!
Under the guidance of our chef you will learn all there is to know about making fresh pasta dough and assorted shapes. In addition to making more traditional shapes like ravioli, tagliatelle, gnocchi, and other varieties, your Corzetti course will also include your hands-on lesson on using the artisanal wooden Corzetti hand-carved stamps to create unique, handmade designs on individual pasta shapes. Your chef’s recipes are all based on freshness, high-quality ingredients, tradition and, most of all, the chef's long experience making amazing pasta-based dishes. The experience of working alongside your chef and creating your versatile pasta doughs from semola and other pasta bases, is an unforgettable lesson in traditional Italian cooking. Your chef will explain the technical aspects of homemade pasta preparation, and will lead you through the preparation of a fresh Corzetti pasta dish and two other handmade pasta shapes with their accompanying sauces. With this expert guidance, you will be making homemade Corzetti and other delicious fresh pasta in your own kitchen like a pro! This class is particularly recommended for families with kids.

Should the minimum not be reached for the day you selected, you will be given the choice to pay an additional fee for a private class, change your date to another day, or be fully refunded. Sunday courses have a minimum enrollment of 5 people for course activation. Note that because we only use fresh, seasonal ingredients from local suppliers and farms, the menu will vary depending on what is available that day.
